Scarti d’Italia – the illustrated cookbook by Valentina Raffaeli and illustrator Luca BOSCARDIN c/o SEPIA whisks you away to Italian kitchens full of secrets, appearing at Corraini Edizioni

Luca BOSCARDIN c/o SEPIA illustrated the cookbook ‘Scarti d'Italia’. To do so, he and his wife Valentina Raffaeli traveled across their home country in search of original Italian recipes. The couple combed through the hinterland of Italy where they discovered traditional dishes in which nothing at all is thrown away. The beautiful book describing their journey is peppered with photos and illustrations and was published at Corraini Edizioni.

An adventure across Italy from the sea to the mountains, in search of examples of ethical and sustainable use of what nature and craftsmanship offer us.” Valentina & Luca

The publishing company tells us : “A trip across Italy on board a blue van which has been transformed into a mobile home, a central theme when cooking offal, known as the quinto quarto or fifth quarter: spleen, liver, lampredotto, pig’s feet, entrails that are cooked according to traditional recipes such as trippa canapina or coratella brodettata. During ten months on the road, Valentina Raffaelli and Luca Boscardin explored the country in search of culinary traditions associated with offal, and describe it through drawings, photographs and local recipes. Valentina and Luca met chefs, restaurateurs, and farmers, they tasted and cooked, focusing on what some might call “waste” parts and reflecting on the role that tradition can play in the contemporary debate on sustainability. An unusual cookbook, Scarti d’Italia is a study on what we eat and what we waste, a culinary adventure where nothing is thrown away.”
